It has 2x 3.5" HD bays and 2x 5.25" bays, so if you can dispense with an
optical drive...

A number of companies make mobile racks that fix 3x 3.5" drives in 2x
5.25" drive bays, something like this one:

Again, you need to sacrifice the ability to use an optical drive.

One of these would be fantastic if they made it in a MicroATX or
MicroBTX form factor:
