I use mencoder, which is part of the mplayer package. Depending
upon what you want, you can also use VLC, they have different options
and output different file formats.

Both run on *nix, Windows and MacOS X, using the same command line
syntax, so if you live in a mixed environment, you can use all
the computers availble when they are not in use. :-)
