Maybe what I'm doing isn't *exactly* like you're you're needing, but  
here's what I did:

Mail -> Preferences... -> Rules -> Add Rule

Description: Older than one month

If [ any ] of the following conditions are met:

[ Date Received ] is greater than [ 30 ] Days old

Perform the following action:

[ Set Color ] [ of background] [ Red ]   +
[ Move message ] to mailbox: [ Month-old Mail ]

OK

You could select the "Run Applescript" to get a better date range  
( say, all email from 2007, from 2006, etc. )  or do more complex stuff.
