I think my suggestion would be Cat6a if you do any change there, and run
multiple lines to each room instead of just one or two (ethernet or
ethernet+phone).  It's nice to be able to plug two things in in the same
room without needing a switch.  I'd probably run 5 Cat5e/Cat6a and one TV
coax to each room, which is about the max you can fit in a single-wide
keystone jack.

Or, have them run 3/4" conduit, and you can always wire or rewire it later
pretty easily. :)
