If they are break-before-make switching across all pins - that is, if
they disconnect from the one device completely before connecting to the
other at all - then I can't see how they're any different from
replugging a cable.
Whether moving the cable is dangerous is a different question entirely,
one to which I've heard different answers depending on various things,
but I've never heard/seen any reason to think it's dangerous in the
particular case of analog video.
And, of course, that's assuming the switchbox _is_ break-before-make.
