It isn't pretty, although it's been a long time since I built it.

I'd vote for Exim (http://www.exim.org). It doesn't use configure (which
can be said to be an advantage) so it's a little trickier to build.
But the configuration is fairly straight forward.
Mind you if you're going to spend a lot of time doing this it's worth
investigating all the choices (well ... except for qmail) to see which
one suits you the best. After all tinkering with your MTA can be pretty
addictive.
